Clean Eating: Day 4
We survived National Pizza Day sans pizza, and we surpassed hump day. But the real challenge lies ahead: 3 doubles, 3 days and a lot of clean food that has to be prepped before work.
Thursday is pretty jumbled liked Wednesday but not as bad so go Pace Family!
Pomegranate pistachio parfait
Tofu salad (we ate our left over turkey acorn squash!)
An orange
Cauliflower rice bowl
Pumpkin bark
For the parfait, we used mostly blueberries in between the layers of yogurt, and topped with some pistachios and pomegranate seeds. Definitely better than the McD's parfaits but I kinda missed the granola.
Since we ate the tofu salad for lunch on Wednesday, we had our leftover turkey stuffed acorn squash, which was just as good as the night we cooked it! A great filling lunch for a hungry gal.
Orange snack- I'll refrain from making an orange you glad you didn't say banana jokes here.
Oh, shit.
For dinner, probably the BEST meal thus far in the whole challenge. Seriously, the cauliflower rice bowl was amazing. I prepped the "rice" and toppings for the bowl all before work in les than 30 minutes, so it's a super simple meal to do.
The rice is great, tastes like actual rice! Topped with goat cheese, scallions, hard boiled eggs, cherry tomatos and salsa- this is my favorite meal and definitely one we'll cook after the challenge! It says the salsa is optional, but add it in on account of deliciousness.
Pumpkin bark for dessert and Jesus Mary Joseph that stuff must be multiplying because we can't get rid of it.
Day 4 complete and we're looking forward to another meatless day ahead of us!
