Clean Eating: Day 7
Can you ever just see the light at the end of the tunnel?
We have already planned to celebrate our completion by eating pizza for dinner, but I'll get to that later.
Sweet potato, kale and egg bake
Steak, asparagus and cauiflower rice bowl
Orange and almond snack
Parnsip noodles with tomatos and goat cheese
Baked pear
We did almost all of Day 7..
For breakfast, you combine the leftover sweet potato and turnip mash with kale in a cast iron skillet, then top with two eggs and bake in the oven. I really liked this breakfast! It was too much for me to eat by myself, but half of the breakfast was the perfect portion.
For lunch, I took the cauliflower rice bowl to work, however being busy, I ate it cold. Not so good. It probably would've been better warmed up, but hindsight is 20/20. I didn't eat the snack at work, oops.
When I left work at 5:30 (my first non double shift in 4 days!), my mom had called in a pizza at Domino's, which couldn't have been better.
We ate pizza, drank Three Blind Mice (one of our favorite beers) and watched Spectre by the fire as a family. For dessert, we had chocolate covered strawberries. It wasn't spiralized parsnip noodles, it probably had a million calories, but it was the perfect ending to a Sunday and a rare commodity to get all of us sitting down eating dinner at the same time.
Did we make it to the end? Yes. Did we follow the challenge exactly? Hell no.
